Demi Chef de Partie – Japanese Cuisine

We are seeking a skilled and disciplined Demi Chef de Partie – Japanese Cuisine to support the delivery of authentic, high-quality Japanese dishes within a four- or five-star hotel or luxury dining environment. This role is ideal for a culinary professional with strong fundamentals in Japanese cuisine, a keen eye for detail, and the ambition to grow into a senior kitchen leadership role.

A professional overview of your role:
As Demi Chef de Partie – Japanese Cuisine, you will support section operations, ensure consistency and precision in preparation, and uphold the highest standards of quality, hygiene, and presentation associated with Japanese culinary traditions.

Key responsibilities include:

  • Assisting the Chef de Partie in managing the Japanese kitchen section during preparation and service.
  • Preparing and presenting Japanese dishes in line with approved recipes, techniques, and brand standards.
  • Supporting mise en place for sushi, sashimi, tempura, grills, and other Japanese specialties as applicable.
  • Ensuring consistency in taste, portioning, and presentation at all times.
  • Supervising and guiding Commis Chefs within the section during daily operations.
  • Maintaining strict compliance with food safety, hygiene, and HACCP standards, with particular attention to raw food handling.
  • Assisting with stock control, proper storage, labeling, and FIFO practices.
  • Minimizing food wastage and supporting cost-control initiatives.
  • Coordinating closely with other kitchen sections to ensure smooth service flow.
  • Following instructions from Sous Chef and Executive Chef and supporting overall kitchen discipline.

What we are looking for:

  • Proven experience as a Demi Chef de Partie or Senior Commis Chef – Japanese Cuisine, preferably in a four- or five-star hotel or upscale Japanese restaurant.
  • Strong knowledge of Japanese culinary techniques and ingredients.
  • Experience in sushi and sashimi preparation will be a strong advantage.
  • Solid understanding of food safety standards, particularly for raw and seafood items.
  • Ability to work with precision in a fast-paced, high-standard kitchen environment.
  • Good communication skills in English; Japanese language will be an advantage.
  • Strong teamwork, discipline, and attention to detail.
  • Flexibility to work shifts, weekends, and public holidays.
  • Culinary or professional kitchen qualifications will be an advantage.
