西热初级副厨师长

1.计划,组织和指导厨房的营运包括热厨,宴会及其它食品生产。包含自助餐,零点,客房服务,对厨房员工给予日常指令确保食品的正常生产。在行政总厨和行政副总厨不在酒店时负责厨房的加工生产区域。
2.根据利润率水平来保持食品的产量;设定食品生产区域的卫生标准包括所有操作设备,和维护我们的设备,参与和关注员工的培训和发展。
3.评估厨房工作人员的绩效考核,根据人员编制来安排员工排班表,休假和考勤记录,确保高峰时段的服务和所有生产。
4.提交所需原材料和物资供应的清单并给予上级审批。
5.和行政副总厨一起开发和研制新菜品和配方。
6.控制每日厨房的营运成本,包括:食品采购,食物浪费以及所有能源消耗的控制。
7.熟悉安全保障,突发事件和急救的程序及步骤,监督和指导员工始终贯彻实施酒店的规章制度,检查食品的正确使用数量和质量。

1.具备3-5年西厨房工作经验
2.至少1-2年同岗位经验,奢华酒店或国际联号酒店背景优先
3.能辅助设计菜单,具备成本核算与食材管理能力
4.能良好运用办公软件进行日常管理
5.协助厨师长开展考勤排班、招聘培训及绩效评估
6.适应早、晚班轮值,能从容应对高强度的运营挑战,并具备解决突发问题的能力
