As Assistant Restaurant Manager, you will oversee and support the operations of Ancora Restaurant, Café 57, Alto, and In-Room Dining Services. This role requires hands-on leadership, exceptional service standards, and strong operational oversight across multiple outlets offering diverse concepts, including European Mediterranean cuisine.

As a professional in your role, your responsibilities and essential job functions will include but are not limited to:

  • Support daily operations across Ancora Restaurant (European Mediterranean fine dining), Café 57, Alto (rooftop/pool bar), and In-Room Dining Services
  • Ensure consistent five-star service delivery, aligned with brand and luxury hospitality standards
  • Supervise and coach service teams across all venues, ensuring smooth coordination with culinary, bar, and room service departments
  • Champion product knowledge and service excellence, especially around Mediterranean menu items and beverage pairings
  • Address and resolve guest feedback and service recovery situations professionally and promptly
  • Assist with inventory, procurement, and cost control for multiple outlets
  • Coordinate training for team members, including SOP compliance, upselling techniques, and guest engagement
  • Oversee setup, cleanliness, and readiness of each outlet for service periods
  • Assist in implementing seasonal menus, special promotions, and VIP experiences
  • Collaborate with other departments to ensure in-room dining services are delivered promptly and meet brand standards
  • Ensure hygiene, food safety, and sanitation standards are upheld across all outlets

Ideally, you should possess some or all the following qualifications and experience:

  • 2–3 years of experience in a similar role within a five-star hotel or luxury hospitality group
  • Strong operational experience across multiple F&B venues, including fine dining, cafe, bar, and in-room dining
  • In-depth knowledge and passion for European Mediterranean cuisine and premium guest service
  • Degree or diploma in Hospitality Management or related field preferred
  • Excellent communication and team leadership skills
  • Strong organizational and multi-tasking abilities in high-volume environments
  • Proficiency in POS and hotel systems (e.g., MICROS, Opera, Symphony)
  • Fluent in English; additional languages are a plus
  • High attention to detail, polished appearance, and guest-centric approach
  • Flexible to work shifts, weekends, and holidays as per business needs
