A little taste of your day-to-day:
As a Chef de Partie, you will be responsible for supporting the smooth operation of your assigned kitchen section and ensuring every dish is prepared and presented to the highest standards.
You will bring your culinary knowledge, creativity, and attention to detail to the kitchen while supporting junior colleagues and working closely with the wider Culinary and Food & Beverage teams to deliver exceptional dining experiences for our guests.
- Taking responsibility for the daily operation of your assigned kitchen section.
- Preparing, cooking, and presenting high-quality dishes in accordance with approved recipes, presentation standards, and portion specifications.
- Ensuring consistency in the taste, quality, and presentation of all food prepared within your section.
- Organizing and preparing the section before service to ensure smooth and efficient kitchen operations.
- Supervising and supporting Demi Chefs, Commis Chefs, and other junior colleagues assigned to the section.
- Providing guidance and on-the-job training to junior culinary colleagues to support their development.
- Coordinating closely with the Sous Chef and other kitchen sections during service.
- Monitoring food preparation and ensuring orders are completed accurately and within the required timeframe.
- Checking the quality and freshness of ingredients before use and ensuring products are stored correctly.
- Following recipes, portion controls, and presentation standards to maintain consistency and manage food costs.
- Supporting inventory management and informing the relevant supervisor of stock requirements.
- Minimizing food waste through proper preparation, storage, portioning, and stock rotation.
- Following FIFO procedures and ensuring all food items are correctly labelled, dated, and stored.
- Maintaining excellent standards of cleanliness, organization, and hygiene within the kitchen and assigned section.
- Ensuring compliance with food safety, HACCP, health and safety, and hotel hygiene requirements at all times.
- Using kitchen equipment safely and reporting any maintenance or safety concerns promptly.
- Supporting banquet operations, special events, and other culinary requirements when needed.
- Contributing ideas for menu development, presentation, and improvements where appropriate.
- Maintaining a positive and professional working environment and supporting teamwork across the Culinary department.
- Demonstrating IHG values through positive, respectful, and professional interactions with colleagues and guests.
What we need from you:
- Previous experience as a Chef de Partie or Demi Chef de Partie, preferably within a hotel, resort, or high-volume restaurant environment.
- Previous experience within a luxury or international hotel would be an advantage.
- Relevant culinary qualification or professional culinary training would be preferred.
- Strong culinary skills and a good understanding of food preparation and cooking techniques.
- Good knowledge of food safety, hygiene, and HACCP requirements.
- Strong attention to detail with a focus on quality, presentation, and consistency.
- The ability to organize and manage an assigned kitchen section effectively.
- The ability to guide, support, and develop junior culinary colleagues.
- Good communication and teamwork skills.
- The ability to work efficiently and remain composed during busy service periods.
- A proactive, responsible, and positive approach to work.
- Good understanding of food cost control, portioning, stock rotation, and waste management.
- Flexibility to work different shifts, including early mornings, evenings, weekends, and public holidays.
- Good working knowledge of English; additional languages would be an advantage.
