Key Responsibilities
- Oversee daily operations of the Hot Section, ensuring smooth and timely service.
- Prepare and cook all hot dishes (grills, sautés, roasts, soups, sauces, etc.) according to recipes and standards.
- Ensure all hot food is prepared at the correct temperature, consistency, seasoning, and presentation.
- Monitor mise en place to ensure freshness, proper stock levels, and readiness for service.
- Maintain strict hygiene and sanitation practices, ensuring compliance with HACCP and food safety standards.
- Check quality and freshness of ingredients before use.
- Supervise and guide Demi Chef de Partie and Commis Chefs assigned to the Hot Kitchen.
- Communicate effectively with other kitchen sections to ensure smooth flow during peak service hours.
- Maintain equipment and report any malfunction immediately.
- Assist in menu planning, recipe development, and tasting sessions when required.
- Control waste and ensure proper portioning to meet cost targets.
