The Chef de Partie – Butcher is responsible for the preparation, portioning, and proper storage of all meats, poultry, and seafood used in the hotel’s kitchen operations. This role ensures that products are prepared according to standard recipes, portion control guidelines, and hygiene standards. The Butcher plays a vital role in supporting menu execution across multiple outlets and events.
YOUR DAY-TO-DAY:
- Cut, trim, bone, tie, and grind meats and poultry according to specifications and production requirements.
- Prepare fish and seafood, including cleaning, scaling, filleting, and portioning as required.
- Ensure correct storage, labeling, and rotation of meat and seafood items following FIFO and HACCP principles.
- Maintain cleanliness and organization of the butchery area, tools, and equipment.
- Monitor inventory levels of meat and seafood, report shortages, and assist in ordering as needed.
- Minimize waste through proper handling and portioning practices.
- Coordinate with other kitchen sections to ensure timely delivery of prepared meat items.
- Follow standard recipes and portion sizes, and ensure consistency in product quality and yield.
- Assist in receiving deliveries, checking quality and temperature of meat and seafood products.
- Ensure compliance with food safety regulations, hygiene standards, and internal policies.
WHAT WE NEED FROM YOU:
- Diploma or certification in Culinary Arts, Butchery, or a related field.
- Minimum 2–4 years of experience as a butcher in a hotel, resort, or high-volume kitchen.
- Strong knowledge of meat and seafood cuts, preparation techniques, and hygiene standards.
- Skilled in using knives, saws, slicers, grinders, and other butchery tools and equipment.
- Familiarity with HACCP and safe food handling procedures.
- Physical stamina and ability to handle heavy lifting and standing for extended periods.
- Ability to work in a fast-paced, team-oriented kitchen environment.
