As a Food Hygiene Manager, you will oversee the hotel’s hygiene and sanitation practices, ensuring full compliance with IHG’s food and beverage standards, food safety policies (including HACCP), and local health regulations. You will also champion a culture of safety and cleanliness across all food & beverage operations, enhancing guest trust and team accountability.
Key Responsibilities:- Ensure strict compliance with IHG’s food safety policies and procedures, including the IHG Way of Clean, HACCP principles, and brand audit requirements.
- Conduct regular hygiene audits and inspections across kitchens, outlets, stores, and food prep areas.
- Lead food safety risk assessments and implement corrective and preventive actions as required.
- Work closely with the Executive Chef, F&B team and materials department to ensure hygiene SOPs are followed and enforced.
- Oversee training programs to educate and certify food handlers in hygiene best practices.
- Maintain all records for audits, inspections, and regulatory reporting.
- Manage external vendor relationships for pest control, sanitation products, and waste management.
- Act as the key liaison with health authorities and certification bodies during inspections.
- Lead the food safety crisis management process and respond to guest incidents involving hygiene or food safety concerns.
- Bachelor’s degree or diploma in Food Science, Environmental Health, Microbiology, or related field.
- Certified in HACCP, ISO 22000, or other globally recognized food safety systems.
- Minimum 3–5 years in food safety, preferably within the hospitality industry or international hotel chains.
- Excellent knowledge of local and international hygiene standards and food safety laws.
- Strong interpersonal and training skills to influence diverse teams.
- Ability to lead inspections, handle documentation, and meet audit deadlines.
- Proficient in English (written and verbal); other language skills are a plus.
