Junior Sous Chef - Butchery
Your Day to Day:
- Oversee daily operations of the butchery department, including staff management and scheduling
- Ensure compliance with food safety standards, Halal requirements, and local regulations
- Expertly cut, prepare, and display a wide variety of meats according to customer preferences and Middle Eastern traditions
- Manage inventory, place orders, and maintain relationships with meat suppliers
- Train and mentor junior butchers in proper cutting techniques and customer service
- Provide expert advice to customers on meat selection, preparation, and cooking methods
- Implement and maintain quality control measures for all meat products
- Collaborate with other departments to create special offerings and promotions
- Stay updated on industry trends and introduce new products or techniques as appropriate
Qualifications
- Minimum 5-7 years of experience in butchery, with 2-3 years in a supervisory role
- Expert knowledge of various meat cuts, preparation methods, and butchery techniques
- Proven leadership skills with the ability to train and manage a team effectively
- Strong understanding of food safety practices and Halal requirements
- Excellent customer service skills and the ability to build relationships with clients
- Proficiency in inventory management and basic computer skills for ordering systems
- High school diploma or equivalent; additional culinary education is a plus
- Current food safety certification (e.g., ServSafe) and Halal certification
- In-depth knowledge of local and international meat grading systems
- Familiarity with Middle Eastern meat preferences and traditional cuts
- Physical stamina to stand for extended periods and lift heavy items
- Ability to work in a cold environment and handle sharp tools safely
- Excellent communication skills in English
- Willingness to work flexible hours, including weekends and holidays as needed
