Sous Chef (Pastry)Your Day-to-Day:
- Oversee the pastry production for all outlets including Buffet, Specialty Restaurant, and Afternoon Teatime.
- Ensure quality standards, taste, presentation, and consistency are maintained according to recipes and company standards.
- Manage daily operations of the Pastry Department efficiently and with minimal supervision.
- Supervise the Dinner Service Line and support other events (afternoon tea, pool parties, cocktail parties, special functions)..
- Use daily checklists to monitor production and preparation levels.
- Ensure adherence to company rules, public health regulations, and HACCP standards.
- Maintain areas in readiness for inspections by ship management or local authorities.
- Rectify any discrepancies in food quality or presentation immediately.
- Supervise, guide, and train pastry personnel to boost performance and productivity.
- Mentor and develop subordinates through on-the-job training.
- Assist the Executive Pastry Chef with assignments and recipe reviews.
- Oversee inventory, requisitioning, and proper use of ingredients.
- Work with the Kitchen Steward on equipment maintenance, inventory control, and sanitation.
- Monitor stores for pastry items and high-perishable products.
- Communicate daily with the provisioning team to utilize perishables effectively.
- Control food production to minimize waste and maintain cost efficiency.
- Ensure all pastry equipment is sanitized, maintained, and returned in good condition.
- Enforce safety procedures throughout the department.
- Ensure provisions are transported correctly from the storeroom using proper utensils.
- Ensure menus, recipes, guidelines, and methods provided by Corporate Pastry Chef are followed.
- Conduct and communicate recipe reviews and adjustments.
- Countercheck daily storeroom deliveries for accuracy.
Qualifications:
- Diploma or Certificate in Pastry Arts or Culinary Management from a recognized culinary institute.
- Minimum 3–5 years of experience in a supervisory role within a high-volume pastry kitchen, preferably in luxury hospitality or cruise operations.
