WHAT WILL I ACTUALLY BE DOING?

 

Responsible for the day to day operation of the Stewarding Department. To provide, direction, supervision and management to the associates and all B&F outlets in order to maximise the quality, service and hygiene provided by this facility. Utilize a leadership style and training programmed, which supports the philosophy of empowerment, provides direction and support to develop a pro-active and flexible team.

KEY RESPONSIBILITIES

  • Supervise and coordinate daily stewarding operations to ensure cleanliness and organization across all kitchens, restaurants, and back-of-house areas
  • Lead, train, and motivate stewarding team members, ensuring proper staffing and task delegation during shifts
  • Ensure all kitchen equipment, utensils, and operating equipment are cleaned, sanitized, and stored according to hygiene standards
  • Monitor and enforce compliance with food safety and sanitation regulations (e.g., HACCP)
  • Oversee dishwashing operations to ensure efficiency and timely turnaround of equipment for service
  • Conduct regular inspections of kitchens and storage areas to maintain cleanliness and safety standards
  • Coordinate waste management, recycling, and pest control practices in line with hotel policies
  • Maintain inventory of cleaning supplies and stewarding equipment; place orders as needed
  • Report and follow up on maintenance issues for kitchen equipment and facilities
  • Support the culinary and F&B service teams to ensure smooth daily operations and event execution
  • Ensure proper handling and storage of chemicals and cleaning materials
  • Assist in implementing cost control measures and minimizing breakage or loss of equipment
  • Handle team scheduling, attendance, and performance monitoring
  • Respond promptly to operational issues and emergencies, ensuring minimal disruption.

WHAT WE NEED FROM YOU

  • Previous experience in stewarding or kitchen operations, preferably in a luxury hotel environment
  • Proven supervisory or team leadership experience
  • Good knowledge of hygiene, sanitation, and food safety standards (e.g., HACCP)
  • Strong organizational and time management skills
  • Ability to lead, train, and motivate a team
  • Physically fit and able to work in a fast-paced environment
  • Flexibility to work shifts, weekends, and public holidays
  • Basic communication skills in English; additional languages are an advantage
